At just 90 calories each and 4 grams of fat, they are a win! In this recipe, we use some gourmet twists in the dough to give you a boost of unexpected and delicious flavor profiles. The addition of lemon, orange, and lavender are subtle yet elegant. Vegan Lavender Citrus Gingerbread Cutout Cookies
Organic Coconut Oil|
1 cupOrganic Coconut Sugar|
1 cupOrganic Stevia Baking Blend|
1 cupChamomile Tea, double strength|
½ cupOrganic Molasses|
1 ½ cupOrganic Grains Whole Wheat Pastry Flour|
1 ½ Tbsp.Baking Powder|
1 Tbsp. Cinnamon|
2 Tbsp.Lemon Zest, fine grated|
1 Tbsp.Orange Zest, fine grated|
1 Tbsp.Culinary Lavender, ground|
1 tsp.Ground cloves|
1 ½ tspSea salt|
Directions: In a large bowl, cream oil, coconut sugar, and stevia blend. In a separate bowl, combine the flour, ginger, baking powder, cinnamon, lemon, lavender, cloves and salt; gradually add to creamed mixture and mix well. Cover and refrigerate for 4 hours or overnight or until easy to handle.
On a lightly floured surface, roll dough to 1/4-in. thickness. Cut with floured 3-in. cookie cutters.
Transfer from work surface to a parchment lined cookie sheet using a spatula to preserve the shape of the cookies.
Place 1 in. apart on ungreased baking sheets. Wash and sanitize work surfaces after handling raw dough and flour.
Bake at 350° for 8-10 minutes or until edges are firm. Remove to wire racks to cool. Decorate cookies. Yield: 5 dozen.
Optional Royal Icing:
Powdered Sugar, sifted| 1 pound (3-3/4 cups)
Water| 1/4 cup water
Almond extract| 1 tsp.
Directions: Whisk together the powdered sugar, water, and flavoring. Decorate cookies as desired. Allow to dry fully before transferring to serving platters.
