African-Style Sweet Potato, Peanut & Quinoa Stew

This recipe is super simple to make in a slow cooker for the busy bustle of the holiday season. It’s warm and elegant served at any dinner party as a main dish, or as a flavorful appetizer.

Ingredients:

1 can organic tomato sauce (28 oz.)
1/2 cup organic chunky peanut butter (opt for no-sugar-added)
1 Tbsp. garlic, minced
1 Tbsp. cumin, ground
1/2 tsp. cinnamon
1/4 tsp. smoked paprika
1 lb. sweet potatoes, peeled and cut into 1-inch pieces
1 cup Organic Grains red  or white quinoa, rinsed
2 cup vegetable stock

To top:

Chopped peanuts
Fresh cilantro, chopped
Bell pepper, minced
Seasoned cooked chicken or vegan can use jackfruit

Directions:

  • Place all stew ingredients in a 5-quart slow cooker.
  • Cook covered on high for 3-4 hours or on low for 6-8 hours.
  • 20 minutes before serving, add the chicken or jackfruit.
  • Top with cilantro, peanuts, and bell peppers. Enjoy!
