Teff in pizza dough is amazing and works really well. It adds a crispy texture that everyone loves. Just use the whole grain. Amaranth and chia seeds also work well in pizza dough.
Teff Pizza Dough
1 cup sourdough starter
1 bottle hard cider or beer
1 cup teff
2 teaspoons salt
2 tablespoons instant yeast
3 cups Organic Grains Bread Flour
Place sourdough starter, liquid, teff, salt, and three cups flour in your Mixer. Place yeast on top of the flour and mix adding more flour until dough pulls away from the sides of the bowl. Knead for 6 minutes and remove from mixer and let rise. Roll out and prepare your pizza.
