Sweet Sprouted Amaranth and Honey Cornbread

Yesterday we shared how to Make Your Own Cornmeal using the Wondermill Electric Mill and we thought we'd share some pretty freakishly delicious cornbread with you now that we've given you the skinny on brilliantly fresh cornmeal at home.

Organic Sprouted Amaranth is one of those ancient grains that gives you super nutrition. Because of the sprouting process, it is literally a powerhouse of goodness for your body...and yes, it is one of the grains that we can mill for you fresh to order. It's a tiny grain, but it's fiercely fantastic. 

This cornbread recipe calls for our Organic Grains Sprouted Amaranth milled into a flour, so be sure to hit that option when ordering it so it is the right texture to make this bread. This recipe is gluten-free with some vegan modifications available at the end of the post as well. 

Sweet Sprouted Amaranth and Honey Cornbread

Organic Grains Sprouted Amaranth flour| 1 cup
Organic Grains Corn, milled to a meal| 1 cup
Sea salt| 1 tsp
Baking Powder| 2 tsp.  
Organic Honey or Agave Nectar| ½ cup
Eggs, large*| 3
Almond milk| 1 cup
Olive oil or avocado oil| 1/3 cup oil

Directions: In a 2-quart sized bowl, combine the amaranth flour, cornmeal, sea salt and baking powder.  Whisk the honey, eggs, almond milk, and oil in a medium bowl. Add the egg mixture to the dry mixture and mix until smooth, about 1 minute. Pour batter into a greased 9-inch baking pan or deep cast-iron skillet. Bake at 400°F 30-35 minutes until golden brown and internal temperature over 180°F.

*Vegan alternative:  mix 3 Tbsp. White Chia Seed with ¾ cup water and allow to thicken about 5 minutes and use in place of eggs.
