Homemade Ancient Grain Quinoa Tortillas


2 1/2 C Organic Grains Sprouted Einkorn Flour

1/2 C Organic Grains Quinoa (measure after cooking)

1 tsp salt

1 tsp baking powder

3/4 C water

1/4 C avocado oil


Yield: 1 dozen tortillas

  1. In a large bowl, combine the flour, quinoa, salt and baking powder
  2. Heat water to a rolling boil in a small saucepan and pour into the dry ingredients
  3. Add the oil and stir until smooth and combined, about 2 minutes
  4. Allow the dough to cool for a few minutes
  5. Knead 3-4 minutes by hand
  6. Divide into 12 equal pieces and roll between 2 pieces of parchment paper until 1/4 inches thin, and about 4 inches in diameter
  7. Heat a large, 12-inch griddle over medium-high heat and cook the tortillas 2-3 minutes on each side until golden brown
  8. Place cooked tortillas in a covered dish to keep warm 
  9. Serve warm and enjoy!
