Autumn Organic Grain Bowl

Heading into the cooler months means embracing more warming and grounding foods! This organic grain bowl is the perfect way to your nourish body, mind and soul.

Ingredients:

1 cup Organic Grains quinoa
2 cups vegetable stock or water
2 sweet potatoes, chopped
1 lb. brussels sprouts, chopped
arugula
dried cranberries
chutney (or sauce of your choice)
roasted nuts and seeds

Directions:

  • Preheat the oven to 425° F. Chop vegetables to desired size (we chose bite-sized chunks).
  • Toss vegetables in olive oil and spices of your choice. Spread out on a sheet pan and roast vegetables for approximately 30 minutes.
  • While your vegetables are roasting, cook your Organic Grains quinoa. Rinse quinoa in a fine-mesh strainer.  In a quart-sized saucepan combine the quinoa with 2 cups vegetable broth and bring to a boil. Reduce heat to low and cook for 20 minutes. Once cooked, fluff with a fork.
  • Fill your bowl with cooked quinoa, roasted veggies, and any other toppings or proteins you like. Enjoy!

*Note that this recipe will yield 4-5 servings, making it perfect for meal prep or to share with family and friends.
