Caramel Chia Tapioca Pudding

Chia has made a tremendous comeback over the last few years, despite the previous 500 years or so of relative obscurity. So what's the deal with this super-food? Why the buzz? Chia seeds are the highest plant source of omega-3 fatty acids, and they contain more fiber than flax seeds or nuts. Chia seeds are gluten free and comes in Black and White varieties. Because of their natural ability to absorb immense amounts of liquid, they are an outstanding addition to your diet when coupled with water, to maintain hydration during physical exertion. Two keys in the battle against dehydration are regulating body fluid levels and the retention of electrolytes. Because Chia absorbs 30 times its weight in water, chia is your perfect ally!  

Chia seeds will naturally have a texture like tapioca when combined with liquid. Technically, they're perfect for a whole-foods pudding that will satisfy your sweet tooth and keep you going during your marathon of life. The other good news is that chia is high in fiber and will keep you full longer and can aid in weight loss efforts. Eating pudding all day and still losing weight? Win! If you don't top the pudding with whip cream, this recipe will also be vegan. Enjoy.

Caramel Chia Tapioca Pudding
Yield: 4 1 cup servings
Prep time: 15 minutes

Chia Seeds | ½ cup
salt | ¼ tsp
Cinnamon | 1 tsp.
Nutmeg | pinch
Hot Water| 1 cup
Whip Cream | 1 cup
Coconut sugar | ½ cup
Fresh berries | 1 cup
Vanilla | 1 tsp.

Put the chia seeds, the salt, cinnamon and nutmeg in a quart sized bowl. holding at least 3 cups. Pour the hot water over the mixture. Allow to thicken, stirring every few minutes. Add ½ the coconut sugar to the seed mixture. In a cold bowl combine the remaining coconut sugar, vanilla and cream. Whip the cream until stiff. Divide seed mixture between 4 serving cups. Top with fruit and whip cream.
