Amaranth Cheese “Grits” & Cajun Shrimp

Cheese grits are one of the great southern comfort foods. Naturally, we’re putting a whole-grain twist on this dreamy classic.

Ingredients:

Cheese Grits:

1 cup Organic Grains Amaranth
3 cups water
salt to taste (about 1 tsp)
1 cup sharp cheddar cheese, shredded
3 Tbsp. low-fat cream cheese

Sassy Cajun Shrimp:

1 1/2 lbs. shrimp with shells removed
2 Tbsp. avocado oil or olive oil Avocado oil
1 Tbsp. chile powder
1 Tbsp. Creole seasoning
1 Tbsp. minced garlic
1/2 tsp. black pepper
1 Tbsp. lemon juice

Directions:

Amaranth Instructions:

  • Combine water and salt in a 1 and a half quart (6 cups) capacity heavy pot with a tight-fitting lid and bring to a boil.
  • Add the amaranth grain, cover the pot, and turn the burner to the lowest setting. Simmer 20 minutes. Turn off heat.
  • Add the cheese and cream cheese. Stir well until cheese melts.

Shrimp Instructions:

  • While the amaranth is cooking, heat oil in a large skillet. Add shrimp and cook just until pink.
  • Add remaining ingredients and sauté 1-2 minutes more.
  • Serve over hot Amaranth Cheese “Grits.”

Optional Other Toppings:

  • Sausage (meat or veggie)
  • Sweet & spicy green apple salsa
  • Red pepper flakes
  • Broccoli or other steamed veggies
