Homemade Ancient Grain Quinoa Tortillas

These simple & nutritious tortillas are made with pre-cooked quinoa and sprouted einkorn flour. They have a fresh, clean flavor.

Ingredients:

2 1/2 cups Organic Grains Spelt flour  or Whole Wheat Flour
1/2 cups Organic Grains Quinoa (measure after cooking)
1 tsp. salt
1 tsp. baking powder
3/4 cup water
1/4 cup avocado oil

Directions:

 

  • In a large bowl, combine the Organic Grains Spelt flour,  Organic Grains quinoa, salt, and baking powder.
  • Heat water and oil to a rolling boil in a small saucepan and pour into the dry ingredients. Stir until smooth and combined, about 2 minutes.
  • Allow the dough to cool for a few minutes. Knead 3-4 minutes by hand.
  • Divide into 12 equal pieces and roll between 2 pieces of parchment paper until 1/4 inches thin, and about 4 inches in diameter.
  • Heat a large, 12-inch griddle over medium-high heat and cook the tortillas for 2-3 minutes on each side until golden brown.
  • Place cooked tortillas in a covered dish to keep warm. Serve warm and enjoy! Yield: 1 dozen tortillas
