Sugar-Free Toasted Pecan Spelt Shortbread Cookies

Last week we made some delicious Toasted Spelt Turkey Vegetable Soup to warm up the cold winter nights and today we're getting ready for the holidays with something else made with our amazing Organic Grains Whole Spelt Spelt is a variety of wheat that has been cultivated for over 5000 years. Sugar-FreeToasted Pecan Spelt Shortbread Cookies


Butter, softened| 1 cup
Pyure Organic Stevia Baking Blend| ½ cup
Eggs| 1
Vanilla| 1 ½ tsp
Organic Grains Whole Spelt Flour |3 ¼ cup
Organic Pecans, minced fine| ½ cup

Directions:  Preheat oven to 350°. In a large bowl, cream butter and Stevia granules. Add egg, vanilla and mix well. Gradually add flour; fold in pecans. Roll dough into 1-in. balls. Place on ungreased baking sheets and flatten with fingers. Bake 12-15 minutes or until bottom edges are golden brown. Cool on a wire rack. Yield 2 ½ dozen cookies. Drizzle with melted stevia sweetened chocolate if desired. Estimated Nutritional Information: Serving Size 1 Cookie, 103 calories, 7 g fat, 10 g carbohydrate, 2 g protein.
