Did you see the new pumpkin spice scented Clorox bleach that just came out?! Seriously...that was a lie. There's not pumpkin spice bleach. However...
Either you really love pumpkin or you barely tolerate it during this season. Hopefully you're one of the lovers. Don't be a hater. Recently we added a new product to our site. Organic All-Purpose Flour is here! It's the perfect flour for those who want to eat clean, but who may just prefer white flour. It's still amazing flour, as you've come to expect from Organicgrains.com! Now for the recipe. For those with seasonally-effected-pumpkin-spice anxiety-disorder, we can only promise that these muffins are not overly spicy and mostly chocolate-chippy...(is chippy a word?). These muffins are sweetened with a low amount of coconut sugar and we used stevia-sweetened chocolate chips to keep them lower in sugars.
The Best Pumpkin Chocolate Chip Muffins
Eggs| 4 large
Coconut Sugar| 1 cup
Pumpkin, Solid-Pack Organic| 1 can (15 ounces)
Olive Oil| 1/2 cup
Organic All-Purpose Flour| 3 cups
Baking Soda| 2 tsp.
Baking Powder| 1 tsp.
Cinnamon, ground| 1 tsp.
Nutmeg| ¼ tsp.
Salt| ¾ tsp.
Lily’s Sweet Stevia Chocolate Chips| 2 cups (12 ounces)
Directions: In a large bowl, beat the eggs, sugar, pumpkin and oil until smooth. Combine the flour, baking soda, baking powder, spices and salt; gradually add to pumpkin mixture and mix well. Fold in chocolate chips. Fill greased or paper-lined muffin cups three-fourths full. Bake at 400° for 15-18 minutes or until a toothpick inserted in the center comes out clean. Cool in pan 10 minutes before removing to a wire rack. Yield: about 2 dozen.
