This whole grain butternut squash stew is loaded with comforting flavors similar to a chili, but with more vegetables. The chunks of squash become really tender and smooth, giving it a buttery texture with a complex taste. It's an amazingly gourmet twist on a rather simple one-pot slow cooker dish.
