This cinnamon swirl bread is one of the best loaves of bread on earth to make into French toast. For our pastry chef, It is a longtime family tradition to serve this New Years morning to her family. What is Kamut?

Isn't Khorasan wheat the same thing as Kamut?  One of the biggest misconceptions about Khorasan wheat is that the name “Kamut” refers to the type of wheat, while in fact, Kamut® is the trademark name of a quality organic, heirloom grain, Khorasan wheat. The Kitchen Mixer That’s Built For Life

For this bread, and all bread dough on our site, we use the Wondermix.  There are several mixers on the market that will work great if you are making cookies or brownies, but bread dough is a totally different story. We have tested different mixers and ultimately the WonderMix is the best for bread dough. Other mixers start to struggle or do not mix the bread dough effectively. However, the WonderMix can take whole grain flours and mix them beautifully into a smooth consistent bread dough. If you want to mix dough for 1 loaf or 8 loaves of whole wheat bread you won’t have to worry about hurting your mixer, it's built to take it.

Kamut® Cinnamon Swirl Bread


Filtered water| 3 cups 
Olive Oil, lemon infused| 1/4 cup 
Molasses| 1/2 cup
Vanilla| 2 Tbsp.
Orange zest, minced| 2 Tbsp.
Sea Salt| 1
Organic Grains Kamut® Flour7 cups
Active Dry Yeast| 1 1/2 Tbsp.

Cinnamon Filling:

Cinnamon, ground| 2 Tbsp.
vegan butter flavored coconut oil| 1/2 cup
Wholesome Organic Organic Coconut Palm Sugar| 1/2 cup

Directions:  Wash and sanitize all work surfaces and tools. In a large bowl, combine the flour, sea salt, and cinnamon. Measure water, oil, honey, vanilla, orange zest into a Wondermix fitted with the dough hook. Add the yeast using only half the flour and adding yeast last.  Mix gently on speed 1 until the flour is moistened. Continue mixing on speed 2, adding flour until the dough comes away from the sides and bottom of bowl. Knead 4-5 minutes. At the end of mixing add Form into a ball and place in a gallon-sized bowl. Cover with plastic and allow to raise about 30 minutes. Deflate dough. On a floured countertop, roll the dough into rectangle 6 inches by 24 inches, about ½ inch thick.  Spread a thin layer of softened butter over the rectangle. Sprinkle the butter with cinnamon and coconut sugar.  Roll into a tight log and pinch the seam and ends closed.  Cut the roll in half.  Pinch the open ends closed.  Place 1/2 of the roll in a greased loaf pan. Repeat with the second loaf.  Allow to raise, covered with plastic for 30 minutes. 

Just before baking, cut three slashes in the top of the loaf.  Wash and sanitize hands and work surfaces again. Preheat oven to 350° F. Bake for 30-35 minutes or until at least 190° internal temperature. Cool. Frost or decorate if desired.

Cream Cheese Frosting

Vegan Cream Cheese Alternative, softened|3 oz
vegan vegetable shortening| 6 T
Powdered Sugar| ¾ lb powdered sugar (about 3 cups)
Soy Milk| 1 tsp
Vanilla| 1 tsp

Frosting: Combine all frosting ingredients and whip until smooth.
