Ingredients:
2 1/2 C Water, lukewarm
1 tsp sea salt
2 tsp active dry yeast

Instructions:
Yield: 2 loaves || Time: 5 hours 30 minutes
- Mix the ingredients in a large bowl until there are no dry patches
- Cover and let rise at room temperature about 2 hours, or until doubled in size
- Then, refrigerate for at least 2 hours or up to 5 days (longer storage enhances the flavor)
- When you're ready, shape dough as desired, forming 2 loaves
- Place rounded side down into a well-floured 8-inch Brotform rattan proofing basket
- Allow rising uncovered for about 1 hour until doubled
