This recipe is a very simple skillet meals that is a cross between a pizza and a casserole with the added bonus that it doesn't need to be baked in the oven or heat up the house during the hot summer. It's a one-pot wonder too! That means less dishes on a busy weeknight. You totally win with this one!
Saucy Sausage Pizza Millet Skillet
Organic Millet | 1 cup
Chicken Broth | 2 cups
Salt | 1/4 tsp
Italian Herbs | 1 Tbsp.
Lemon Zest| 1 Tbsp.
Sausage Pizza Toppings:
Low-Fat Turkey Italian Sausage, cooked and crumbled | 2 cups
Spaghetti Sauce | 2 cups
Low-fat Mozzarella Cheese, shredded | 2 cups
For Millet Base: Pour millet, chicken broth and salt into a 12 12-inch-deep skillet with a tight-fitting lid. Cover and let simmer on low heat for 15 to 20 minutes, until most of the water has been absorbed.
For Toppings: Spread sauce over the cooked millet, as you would for pizza. Top with crumbled sausage and mozzarella. Sprinkle with parsley. Return lid to the skillet over low heat and allow cheese to melt, about 5 minutes. Serve warm.
