Happy Halloween! This is a simple drop cookie that gives you the texture of a little cake frosted with a sugar-free stevia sweetened chocolate coating that sets firm. They're lightly spiced with just the right amount of orange to give you fantastic flavor. These are decorated for Halloween tonight and ready for the healthiest spooky party!
Spiced-Orange Fluffy Sugar CookiesButter| 1 ½ cup
Coconut Sugar| 1 ¼ cup
Eggs| 3 large eggs
Low-fat Milk | ½ cup
Vanilla| 1 Tbsp.
Orange Zest| 1 Tbsp.
Organic All-Purpose Flour| 4 ½ cups
Organic Sea Salt| ½ tsp.
Baking Powder| 1 Tbsp. baking powder
Pumpkin Spice| ½ tsp
Directions: Preheat oven to 375° F. Wash and sanitize all work surfaces, utensils, and hands before handling raw flour and dough. In a mixer with a paddle attachment, cream butter and sugar until fluffy. Add the eggs one at a time. Add vanilla, orange zest, and milk. Stir well. Combine the flour, salt, baking powder, and spice. Add the flour mixture to the creamed butter mixture, just until combined. Scoop by rounded Tablespoon onto ungreased cookie sheet or sheet lined with parchment paper. Wash and sanitize all work surfaces, utensils and hands after handling raw flour and dough. Bake until lightly golden, about 10-13 minutes. Allow cooling on the baking sheet about 10 minutes before transferring to another location. Store in an airtight container. Yield approx. 5 dozen cookies.
Chocolate Cookie Coating
Stevia Sweetened Chocolate Chips (white or semi-sweet) | 12 oz (2 cups)
Extra Virgin Coconut Oil| ¼ cup
Directions: Melt chocolate chips and coconut oil in a glass bowl in the microwave 1-2 minutes, stirring after 30 seconds, or in a metal bowl over a pan of simmering water, stirring occasionally until smooth.
Top each cookie with a Tablespoon of the melted chocolate and smooth over the surface. Decorate with sprinkles or pipe a decorative swirl or design on the cookie with more coating from a cake decorating bag. Place on waxed paper to set at room temperature.
