Classic Sugar Cookies Made Healthy

 During the Holiday season, there seems to be an influx of goodies and super sugar-filled treats that hit the office break room. As much as we love them, they just lead to trouble in so many areas, usually the areas around the waist and thighs. However, what if a healthy option actually tasted delicious and nobody would be any the wiser? What?! That's right, what if you could eat these little bad-boy sugar-free whole grain cookies made with Organic Grains Fresh Milled Whole Wheat Pastry Flour and the flavor was so amazing that nobody would accuse you of trying to be a Grinch? Wouldn't that be a Christmas miracle?! Well, these are your cookies.  We use an Organic Stevia baking blend along with some sugar-free white chocolate drizzled on top to give these bad-boys freakishly delicious!  They have a very tender fudgy crumb thanks to our Whole Wheat Pastry Flour...

Healthier Sugar-Free Sugar Cookies

Organic Coconut Oil| ¾ cup
Pyure Organic Stevia Baking Blend |1 cup
Vanilla bean paste| 2 tsp.
Lemon zest| 1 tsp.
Soymilk| 1/2 cup
Organic Grains Whole Wheat Pastry Flour| 1 ½ cup
Organic Grains All Purpose Flour|1 cup
Baking powder| 1 tsp.
Sea Salt| 1/4 tsp.


Vegan Stevia Sweetened White Chocolate| 8 oz
Dried Cranberries and Cocoa Nibs for garnish (optional)

Directions: Preheat oven to 350° F. In a stand mixer combine butter, stevia, vanilla bean, and lemon zest. Beat on medium speed for 3 minutes. Beat in eggs until well blended. Whisk together flours, baking powder and salt. Reduce mixer speed to low and gradually add flour. Using a tablespoon, roll into balls, flatten and bake 10 minutes on a parchment-lined baking sheet.

To make cut out shapes spread dough between two pieces of plastic wrap, roll to 1/4-inch thickness and use cookie cutters to shape. Bake on a parchment-lined baking sheet for 10 minutes.  Makes about 24 cookies.
