Butternut Bisque is one of the most popular soups of Autumn and adding some whole grain ancient grain amaranth gives it a hearty richness as well as an ability to keep you full for hours. This bisque is low calorie, a good source of fiber and has no cholesterol. It's also vegan! How awesome is that?!
Vegan Butternut Squash Amaranth Bisque
Butternut Squash Puree| 4 cups
Organic Grains Amaranth| 1 cup
Vegetable Stock| 4 cups
Nutmeg, grated| 1/8 tsp
Onion powder| 1 Tbsp.
Salt and Pepper| to taste
Directions: Combine all ingredients in a gallon sized stockpot. Simmer over low heat for 20-25 minutes until the amaranth is cooked. Serve hot with toasted pumpkin seeds and a sprinkle of nutmeg if desired. Yield 8 servings
