Continuing with our Holiday baking and cookie theme this week, we thought we'd share these hearty grain-tastic flavor bombs of love. The cranberry pistachio cookies of glory are to freakin' die for! They are a healthy handful including our 7 Grain Flakes ( rolled Hard Red Wheat, Oat Groats, Triticale Berries, Rye Berries, Dehulled Barley, Soft White Wheat, Spelt Berries) , our freshly milled Spelt Flour along with good-for your sweeteners like coconut sugar and stevia.
We also used pistachios in these bad-boy cookies. You want to know some random health facts about pistachios?! They're loaded with happy things!
Some of the health facts of pistachio:
- According to Thomas and Gebhardt (2006), pistachios contain a lower calorie content of only 160 per one ounce in comparison to other nuts.
- Pistachios contain a higher amount of protein in comparison with other nuts such as almonds, cashews, hazelnuts, macadamias, pecans, and walnuts. The amount of protein found is 6 g per 1 ounce, which is the highest in comparison to other nuts.
- The fat content in pistachios is also the lowest compared to other nuts. Statistics collected by Thomas and Gebhardt (2006) show that the fat content is 13 g per 1 ounce.
- Pistachios are also a very good source for mono-unsaturated fatty acids such as oleic acid and antioxidants. Taking them on a regular basis is known to be effective in decreasing low-density lipoprotein (LDL), which is known as “bad” cholesterol and helps to increase the amount of high-density lipoprotein (HDL), commonly known as “good” cholesterol.(source here)
Now to Mix Things Up!
Today we're using our favorite mixer, the WonderMix. If you're not familiar with this little workhorse of a mixer, it's probably one of the most convenient and powerful machines our pastry chef could recommend.
Now for the cookies...
7 Grain Cranberry Pistachio Cookies
Organic Grains Spelt Flour| 3 cups
Organic Grains 7 Grain Flakes| 3 ½ cups
Baking Soda| 1 tsp
Cinnamon| 1 Tbsp
Salt| 1 tsp
Organic Dried Cranberries| 1 cup
Organic Toasted Pistachios| 1 cup
Water| 1/2 cup
Coconut Sugar| 1 cups
Pyure Organic Stevia Baking Blend| 1 cup
Organic Coconut Oil| 1 cup
Molasses| ¼ cup
Almond milk| ½ cup
Directions: Preheat oven to 350°. In a WonderMix with the cookie paddle attachment combine the spelt flour, 7-grain flakes, baking soda, cinnamon and salt. On the lowest speed add the water, coconut sugar, stevia blend, coconut oil, molasses and almond milk. Mix for 2 minutes until well combined. Scoop by rounded Tablespoon about 1 inch apart on an ungreased baking sheet. Flatten balls of dough slightly. Bake 10-12 minutes until golden brown. Yield 36 cookies.
