Zucchini Bread Blender Pancakes

Zucchini Bread is super awesome! Today as we celebrate national zucchini bread day, we decided to share something a little big rockin' cool. These pancakes are made by putting whole grains of wheat in the blender along with the liquid ingredients (no flour necessary). Let the blender do the work and end up with amazing pancakes! What?! You read that right! 

Zucchini Bread Blender Pancakes

Yield: 12 4 inch pancakes

Prep time: 8 hours soaking wheat + 5 minutes’ prep


Soft White wheat | 1 cup

eggs | 2

milk | 1 cup

coconut oil | 2Tbsp

Coconut Sugar | 2 Tbsp.

Baking Soda| 2 tsp

Vanilla| 1 tsp.

Salt | ½ tsp

cinnamon | ½ tsp.

Shredded Zucchini | ½ cup

Maple Syrup | to taste


Soak wheat in 4 cups warm water overnight, about 8 hours. Drain well. Place all ingredients except zucchini in a heavy-duty blender and blend on puree until smooth, about 5 minutes. Fold in the shredded zucchini.  Spoon batter on a hot greased griddle and cook 3-4 minutes on each side. Serve warm with maple syrup or caramel sauce.
