Sassy Cajun Shrimp Over Amaranth Cheese "Grits"
Hello gorgeous! I bet you never thought that whole grain could actually sound this freakin' awesome! But look at it, killing it! Creamy-divine meets sassy hot shrimp in this delicious dinner. Hold onto your tutu. This is really dangerous.
So, here's the DL. Amaranth is a gluten-free seed grain and one of the most amazing sources of complete protein (meaning it contains all the building blocks of life). It's one of the smallest grains. It was one of the staple grains of the ancient Incas and is known as "kiwicha" in the Andes today. Besides protein (it boasts 30% more protein than wheat or oats), amaranth is a good source of dietary fiber and minerals like iron, magnesium, phosphorus, copper and especially manganese.

Amaranth Cheese "Grits"
Amaranth| 1 cup
Water| 3 cups
salt to taste (I use about 1 tsp)
Sharp Cheddar Cheese, shredded| 1 cup
Low Fat Cream Cheese| 3 Tbsp
Directions: Combine water and salt in a 1 and a half quart (6 cups) capacity heavy pot with a tight-fitting lid and bring to a boil. Add the grain, cover the pot, and turn the burner to the lowest setting. Simmer 20 minutes. Turn off heat. Add the cheese and cream cheese. Stir well until cheese melts.
Sassy Cajun Shrimp
Shrimp, with shell removed| 1 1/2 lb
Avocado oil or Olive oil | 2 Tbsp
Chile Powder| 1 Tbsp
Creole Seasoning| 1 Tbsp
Garlic, minced| 1 Tbsp
Black Pepper | 1/2 tsp
Lemon juice | 1 Tbsp
Directions: Heat oil in a large skillet. Add shrimp and cook just until pink. Add remaining ingredients and saute 1-2 minutes more. Serve over hot Amaranth Cheese "Grits."
Amaranth Grits: Replace cheese with a few drops of Bragg's Liquid Aminos and cream cheese with vegan soy "sour cream".
Sassy Cajun Shrimp: Replace Shrimp with chopped summer squash.
